Your Hosts - Stavros Tsavalos and his wife Katerina Papadimitrou
Formerly he was an engineer and she was a Greek language historian who traveled often to Paros and first bought a house here by the sea and then had a dream to operate a fully biodynamic farm and planted 700 olive trees and 4,000 aromatic herb plants. Their idea, Stavros says, was to "present what a Cycladic island could produce." In addition to olives they grow figs and pomegranates, and dry many herbs including mint, thyme, rosemary and sage.
Thalassamou Restaurant, Cooking Demo and Tasting of Local Specialties
Afterwards, continue even further down to one of Paros' best restaurants, Thalassamou Restaurant, located on the beautiful beach of Pisso Aliki. Upon arrival, be welcomed by the owners, Anna and her husband the charming chef Marios Salmatanis, who will make you feel instantly like you are family or old friends. Chef Marios Salmatanis will show you how to make sourdough bread with local organic flour and hortapita in his wood-fired oven directly overlooking the bright blue sea. He will also prepare slow-cooked chickpeas in a ceramic vessel in the fire, eggplant salad, and other local dishes using aromatic herbs that you may pick up from the farm. Enjoy all the freshly make local dishes in the shade of trees directly on the beach with the sound of water lapping a few feet away.
