The Experience

Guests will travel via private coach from Kanazawa port to Kutani Kosen Kiln, a prestigious 150-year-old kiln with Imperial Family connections. As one of the few workshops in Kanazawa city still performing all Kutaniyaki processes in a single location, visitors will witness 5th-generation master Koichiro Toshioka demonstrates the techniques that have earned the kiln numerous international awards. The journey continues with an authentic tea ceremony within magnificent Kenroku-en Garden, experiencing this refined ritual that has flourished under samurai influence since the Edo period. The cultural immersion culminates at a traditional ryotei restaurant, where guests will savor a Japanese kaiseki haute cuisine meal imbued with the essence of centuries-old local Kaga cuisine, showcasing the region's sophisticated culinary heritage.

The Menu

The exquisite kaiseki meal highlights seasonal ingredients from both the Sea of Japan and surrounding mountains, a hallmark of the culinary traditions of Kaga, the original name for the region where Kanazawa is located. Signature specialties include jibu-ni (the region's iconic hot pot with duck simmered in flavorful dashi broth) and tai kara-mushi (delicately steamed sea bream in a Chinese-influenced style).

The Host

Host Alejandro Falla earned his master's degree in cultural heritage from Kanazawa University, drawn to the city for its rich artistic traditions that flourished under the Maeda clan's patronage. His specialized knowledge of regional history allows him to illuminate the profound connections between Kanazawa's traditional crafts and culinary arts, revealing how they collectively form the city's distinctive cultural identity. Since 2020, Alejandro has guided visitors through Kanazawa’s hidden gems, sharing his passion for what he considers his second home and helping guests experience the living heritage that makes this city a unique cultural destination.
