Sustainable seafood is at the core of Bergen´s cultural identity and development, and is also reflected in the traditional and coastal gastronomy. The most recent food trend defining the culinary landscape is returning to less complicated dishes prepared with fresh and local seasonal ingredients inspired by old food traditions and techniques.
Naustkultur
In 2017 three seafood enthusiasts from Bergen with unique expertise and knowledge in the marine field bought a 30.000 square meter idyllic islet in the outskirt of the city, only reachable by boat. The surrounding waters of the property create a perfect environment for fresh seafood to live and grow: sea urchins, mahogany clams, Norwegian native flat oysters, scallops amongst other delicacies. Having all this world-class produce available at hand these locals wanted to create a unique food-focused adventure with quality, environment and local food traditions in focus. Their vision was to teach others how to prepare fresh seafood outdoors, introduce them to new species which some might not even know was edible; whilst at the same time deliver an excellent dining experience where new and innovative techniques meet old "Naustkultur" traditions.
Cruise through the fjord
Leave the pier by private boat. As you cruise out of the city center you will see Bergen's famous fish market and your captain will share stories with you about Bergen as a gastronomic city. Gliding through the pristine waters witness views to the city fjord, charming inlets and islands, and possibly catch sight of an eagle.
Deserted Island, Norwegian Seafood
Arriving at the deserted island your chef and host give you a warm welcome and introduce you to 'naustkultur'. Learn how to make a bonfire by the shore, forage for some of the ingredients needed for your meal, and hear about Norwegian food traditions. Some of Norway's finest seafood comes from these pristine waters; sea urchins, mahogany clams, Norwegian native flat oysters, and horse mussels, just to name a few. You will try a few of these delicatessens prepared on the bonfire and you are welcome to assist the chef in the preparation and cooking process. Your chef will teach you to open shells, give useful cooking tips and share recipes that you can try at home. There will also be plenty of time to relax and enjoy the serene beauty surrounding the island.
This adventure is the perfect blend of nature, culture and Norwegian food traditions.
